Cut the vanilla pod lengthwise and scrape out the seeds, then add them to the crème fraîche. Add the powdered sugar and mix well with a whisk until smooth.
Melt the chocolate with a little milk in a bain-marie (in a bowl placed over a pot of simmering water over low heat). Add the vanilla pod peel and chopped mint leaves to the melted chocolate. Let the flavors infuse for at least 10 minutes, then remove the vanilla peel.
Prepare the strawberries: cut them in a cross shape at the top and trim a little from the base so they can stand upright. Dip the base of the strawberries in the melted chocolate (up to halfway) and place them on a platter. Fill the inside of the strawberries with the crème fraîche mixture.
Chef's tip
For a festive look, you can use a piping bag to fill the strawberries with the vanilla cream.
