Peel and finely chop the onion. Wash the rest of the vegetables: cut the zucchini, eggplant, bell pepper, cherry tomatoes, and cucumber into pieces suitable for cooking.

Prepare the brown rice according to package instructions.

Cooking the Curry

In a large pan or wok, heat 2 tablespoons of olive oil and fry the chicken pieces together with the onion for about 4 minutes over medium heat, until the chicken is lightly browned.

Chef's tip

If the sauce is too thick, you can add a little water or vegetable broth to achieve the desired consistency.

For extra freshness, garnish the plate with fresh basil or coriander leaves and a few lime wedges.
