Preparation method

In a large bowl, mix the spelt flour, brown sugar, and soft butter until you get a homogeneous dough. Let the dough rest in the refrigerator for 30 minutes.

Preheat the oven to 160 °C and line a baking tray with baking paper. Remove the dough from the refrigerator and form 20 equally sized balls. Place them on the tray and gently press them with your palm until they are about 1 cm thick. In the center of each cookie, press one whole pistachio.

Place the tray in the preheated oven and bake the cookies for 10–15 minutes at 155–160 °C.
