Preparation method
First, preheat the oven to 200–205 °C. Prepare a baking tray and line it with baking paper.
Place the toast slices on the prepared tray, put them in the preheated oven and bake for 6–7 minutes at 200–205 °C. Halfway through, turn each slice of bread to brown evenly on both sides.
While the bread is toasting, prepare the cheese mixture. In a tall mixing container, add the baby spinach, green chives, ricotta, Greek yogurt, olive oil, salt, and pepper. Blend everything with an immersion blender until you get a fine and homogeneous paste.
Chef's tip
Before serving, you can sprinkle pea or radish sprouts, thin slices of fresh radishes, additional aromatic herbs, and a pinch of pepper on top. This toast also pairs wonderfully with a fresh vegetable salad.
