Rețetă tradițională de găluște pufoase cu prune proaspete de vară, învelite în aluat fin de cartofi și tăvălite generos prin pesmet rumenit în unt cu scorțișoară și zahăr.

Preparation method

Boil the unpeeled potatoes in salted water until tender (about 25-30 minutes). Drain, let them cool slightly, then peel and mash them finely until smooth. Allow the mashed potatoes to cool completely.

Wash the plums, dry them with a kitchen towel, and carefully remove the pits without cutting the plums completely in half. Place a tip of a teaspoon of the sugar and cinnamon mixture inside each plum.

Add the egg, pinch of salt, flour, and semolina to the cooled mashed potatoes. Quickly knead into a smooth, soft dough that doesn't excessively stick to your hands. If needed, dust the work surface with a little more flour.

Chef's tip

For fluffy dough that is easy to shape, make sure the mashed potatoes are completely cold before adding the flour and egg.

Choose ripe but firm plums so they maintain their lovely shape and juiciness inside the dumplings.
