Preparing the meat and crust
Cut the turkey breast into suitable slices (cutlets) and pound them gently with a meat mallet between two sheets of cling film until they reach an even thickness of about 1 cm. Season the meat on both sides with sea salt, ground black pepper, and half of the dried oregano.
Prepare three deep plates for breading: put the white wheat flour in the first; in the second, beat the two eggs with a pinch of salt; in the third, mix the breadcrumbs with the sesame seeds and the rest of the dried oregano.
Pan-frying
Dredge each turkey cutlet first in flour (shaking off any excess), then dip into the beaten egg, and finally coat in the breadcrumb and sesame mixture, pressing firmly with your fingers so the sesame seeds adhere evenly over the entire surface of the meat.
Chef's tip
For an even crispier crust, do not overcrowd the pan while frying. If making more pieces, fry them in batches.
Sesame seeds develop an intense nutty flavor when fried; maintain medium heat to allow the meat to cook through without burning the sesame seeds.
