Rețetă tradițională de gomboți pufoși din aluat de cartofi, umpluți cu cuburi aromate de mere de toamnă cu scorțișoară și tăvăliți generos prin pesmet crocant rumenit în unt.
Preparation method
Boil the potatoes in their skins in lightly salted water until tender (about 25-30 minutes). Drain them, let them cool slightly, peel them, and mash them finely as for mashed potatoes. Allow the mashed potatoes to cool completely.
Peel and core the apples, then cut them into medium cubes (about 2 cm). Mix the apple cubes with 20 g of sugar, half a teaspoon of cinnamon, and the vanilla sugar so they become pleasantly fragrant.
Over the completely cooled mashed potatoes, add the egg, a pinch of salt, white flour, and wheat semolina. Quickly knead into a smooth, even dough, soft yet pliable, that doesn't stick to your hands. If needed, dust a little more flour onto the work surface.
Chef's tip
To achieve exceptionally fluffy dumplings, allow the mashed potatoes to cool completely before incorporating the flour and egg.
Choose aromatic, slightly tart autumn apples (such as Idared or Jonathan), which will create a delicious contrast with the sweet, crunchy breadcrumbs.
