Sezamo
Un desert autentic și parfumat din bucătăria tradițională românească: prune proaspete de toamnă fierte domol cu scorțișoară și vanilie, legate catifelat cu griș de grâu și înnobilate cu miez crocant de nucă rumenită.
Preparation method
Preparing the plums and aromatic simmering
Wash the fresh plums thoroughly under cold running water, halve them, and remove the pits. Place the plum halves in a large heavy-bottomed saucepan.
Pour the still water over the plums, add the granulated white sugar, vanilla sugar, and 2 thin strips of yellow lemon zest. Place the saucepan over medium heat and bring to a boil.
Let the mixture simmer gently over low heat for 10-12 minutes, stirring gently, until the plums are completely softened and release an aromatic ruby sauce.
Chef's tip
If the autumn plums are very sweet and ripe, you can reduce the amount of added sugar, letting the fruit's natural flavor take center stage.
Chisăliță is excellent both warm, served alongside a slice of sweet polenta or plain biscuits, and chilled from the fridge, served as a refreshing autumn pudding.
