Sezamo
Preparation method
Preheat the oven to 190°C and prepare a spacious baking tray. Wash the potatoes thoroughly, peel them, and cut them into generous cubes or thick slices about 2 cm thick.
Wash the apples, core them, and slice them into medium wedges (leave the skin on for a pleasant texture and vibrant colour). Peel the red onion and cut it into thicker slices or quarters, and lightly crush the garlic cloves with the flat of a knife.
In a large bowl, combine the sunflower oil with the dried thyme, sweet paprika, iodised table salt, and ground black pepper, mixing until well combined.
Chef's tip
Choose apples of a firmer, slightly tart variety (such as Romanian red apples or Idared) so they hold their shape during baking and balance the natural sweetness of the potatoes.
For a subtle smoky flavour, you can replace part of the sweet paprika with smoked paprika or add 1-2 fresh sprigs of thyme to the tray.
