Ingredients

  • 50 g millet
  • 260 g carrots, finely grated
  • 1 medium onion, finely chopped
  • ¾ teaspoon rosemary (dried)
  • A pinch of ginger powder
  • ½ teaspoon dried lovage
  • ¾ teaspoon thyme (dried)
  • ½ teaspoon ground coriander
  • ½ teaspoon turmeric powder
  • 1 tablespoon ground onion
  • A pinch of nutmeg (ground)
  • ½ teaspoon paprika
  • ¼ teaspoon dried garlic powder
  • ¼ teaspoon ground black pepper
  • ¼ block tofu
  • 1.5 tablespoons soy sauce
  • 1 tablespoon inactive yeast
  • 1.5 tablespoons cornstarch
  • 1 tablespoon corn flour

Preparation method

    Rinse the millet very well under hot running water (four times) to remove any bitterness, then simmer it in water until done.

    Finely grate the carrots; chop the onion. Sauté the onion and carrots separately (lightly salt before frying) until softened.

    In a bowl, combine the cooked millet, sautéed carrot and onion, crumbled tofu, all the spices, inactive yeast, soy sauce, salt, and pepper. Then add cornstarch and corn flour to bind the mixture.

    Mix well until you get a homogeneous, slightly sticky mixture. Form patties and place them on a baking tray lined with parchment paper. Lightly drizzle or brush them with a little oil.

    Bake them at 190 °C (in an air-fryer or convection oven) for approximately 25 minutes (or until cooked and slightly crispy on the outside).
