Preparation method

In a large bowl, mix the grated coconut, honey, and coconut milk until you get a homogeneous mixture.

Place the bowl in the freezer for about 20 minutes, so that the mixture hardens enough to be shaped.

While the mixture is cooling, prepare the chocolate glaze. Break the chocolate into small pieces and melt it in a double boiler (bain-marie). Pour water into a larger pot and bring it to a boil, then reduce the heat to low. Place a heat-resistant bowl (glass or stainless steel) containing the chocolate on top, making sure the bottom of the bowl does not touch the water. Stir continuously until the chocolate is completely melted and smooth.

Chef's tip

For a professional look, you can sprinkle a little grated coconut on top of the pralines immediately after dipping them in chocolate, before it hardens. If you prefer a vegan version, make sure the chocolate used does not contain traces of milk.
