In a thick-bottomed glass, place the orange slice and the 5 g of sugar. Use a muddler to gently crush the orange with the sugar, releasing the aromatic oils from the peel.
Fill the glass three-quarters full with ice cubes.
Pour the 40 ml of bourbon and 30 ml of sparkling mineral water over the ice. Stir gently with a bar spoon.
Chef's tip
For an authentic taste, use an 'Old Fashioned' type glass (with a thick bottom) and ensure the ice is fresh. If you want a more complex note, you can add a few drops of Angostura bitters.
