Place the rice noodles in a bowl and pour boiling water over them until they are completely covered. Set them aside to soften.

Cut the pork loin into very thin slices (about 2 mm), cutting across the muscle fiber. Place the meat in a small bowl and mix it with 1 tablespoon of soy sauce (from the total amount), 1 tablespoon of oil, salt, and pepper. Leave in the fridge until ready to use.

Prepare the vegetables: clean the mushrooms and cut them into quarters. Peel the carrot and cut it into thin strips (julienne). Peel the onion and garlic; slice the onion thinly and finely chop the garlic. Peel the ginger and cut it into small cubes. Separate the Chinese cabbage into the white and green parts; cut the white part into 2 cm cubes and the green part into wider strips.

Chef's tip

For an even more intense flavor, you can sprinkle toasted sesame seeds or sliced green onions on top of the dish before serving.
