Preparation method
Wash the green chives, dry them well, and cut them into small pieces.
In a bowl, beat the eggs with a whisk or a fork. Add the chopped chives, salt, and pepper, then mix well until combined.
Heat the oil in a pan over medium-high heat. Pour the egg mixture into the pan and gently rotate it so that the mixture evenly covers the bottom of the pan.
Chef's tip
For an even fluffier omelette, you can add a tablespoon of milk or cream to the egg mixture before beating them.
Serve the omelette with a slice of toasted whole wheat bread and a few cherry tomatoes for a complete breakfast.
