Preparation method
Preparing the chicken and marinating
Cut the chicken breast into cubes of approximately 2 cm and place them in a large bowl. Peel 2 cloves of garlic and crush them over the meat. Add the ground coriander, sweet paprika, dried oregano, grated zest and juice of one lemon, salt, and pepper. Mix everything well so that the meat pieces are evenly coated with the spices. Prepare 4 skewers, thread the meat cubes onto them, and leave them in the fridge for at least 30 minutes.
Preparing the tzatziki sauce
While the meat is marinating, prepare the tzatziki sauce. Finely chop the mint and dill. In a small bowl, grate the cucumber on a fine grater, add a little salt, and let it sit for 5-8 minutes to release its water. Meanwhile, peel the last clove of garlic, crush it into a medium bowl, and mix it with the mint, dill, and Greek yogurt. Squeeze the grated cucumber well to remove excess water, then add it to the bowl along with the juice of half a lemon and salt to taste. Mix well and place the sauce in the fridge.
Cooking and serving
Once the skewers have chilled, heat 2 tablespoons of oil in a pan over medium heat. Place the skewers in the pan and fry them for 5-6 minutes on each side, until the chicken is well cooked and golden. Remove the skewers from the pan.
Chef's tip
If you are using wooden skewers, soak them in water for 20 minutes before threading the meat onto them to prevent them from burning in the pan.
For an even more authentic taste, you can serve the skewers with slightly warmed Greek flatbreads.
