Wash the chicken thighs, pat them dry, and cut them in half through the joint. Wash the bell peppers, remove the seeds, and cut them into thin strips. Peel the onion and chop it finely. Peel the garlic and crush it.
Assembly and Baking
Preheat the oven to 180 °C and prepare a baking dish (approx. 23 cm × 27 cm). Place the rice in the dish and add the curry powder, dried thyme, sliced bell pepper, onion, crushed garlic, 2 tablespoons of olive oil, salt, and pepper. Pour the chicken broth over it and mix well. Arrange the chicken pieces on top of the mixture, then season them with salt and pepper.
Cover the dish with aluminum foil or a lid and place it in the preheated oven. Bake for 40–45 minutes at 180–185 °C.
Chef's tip
For an even more intense flavor, you can lightly brown the chicken pieces in a pan before placing them in the dish.
