If using fresh corn, remove the husks and silks, wash it thoroughly, and pat it dry with a paper towel.
Heat the grill or a pan to medium heat and cook the corn for about 10-15 minutes, turning it regularly, until it is evenly browned and takes on a golden-brown color. Some areas can be slightly charred for extra flavor.
Meanwhile, in a small bowl, mix the mayonnaise, fermented cream, lime juice, finely chopped garlic, and a pinch of salt until you get a homogeneous mixture.
