Preparation method
Preparing the meat and browning
Cut the pork into medium-sized cubes of about 3-4 cm and pat them dry with a paper towel. Season the pieces with iodized salt and ground black pepper.
Heat the sunflower oil in a deep saucepan or Dutch oven over medium-high heat. Add the pork cubes and brown them nicely on all sides for 8-10 minutes, until they form an appetizing golden crust.
Aromatic garlic and tomato sauce
Finely chop the yellow onion and crush the garlic cloves. Add the onion to the meat and sauté for 3-4 minutes until translucent. Pour in the dry white wine to deglaze the bottom of the pan and let the alcohol evaporate for 2 minutes.
Chef's tip
For an even more intense flavor, you can add half of the garlic at the beginning of sautéing and the rest 5 minutes before turning off the heat.
Pork ostropel is even tastier the next day, after all the flavors of garlic, thyme, and tomatoes have completely melded together.
