Wash the pork, pat it dry with a paper towel, and cut it into medium 3-4 cm cubes. Peel and finely chop the onion, cut the carrot into small dice or fine rounds, and finely crush the garlic cloves. Chop the fresh dill.
Browning and slow cooking
Heat the sunflower oil in a spacious saucepan or Dutch oven. Add the pork cubes and brown them over medium heat for 8-10 minutes on all sides until appetizingly golden brown.
Add the onion and carrot to the meat. Sauté the vegetables for 4-5 minutes over gentle heat, stirring occasionally, until the onion becomes translucent and sweet.
Chef's tip
Fresh dill added at the end is the secret to traditional pea stew – do not boil it, so it keeps its intense aroma and vibrant color.
If you want an even more flavorful sauce, you can add half a teaspoon of sugar to balance the acidity of the tomato paste and the natural sweetness of the peas.
