Tumbet mallorquín este un preparat emblematic din Insulele Baleare: straturi generoase de cartofi, vinete și ardei copți, îmbrăcate într-un sos bogat de roșii cu usturoi și ierburi. O mâncare mediteraneană la cuptor, reconfortantă, aromată și 100% vegetariană.
Preparation method
Preparing the vegetables
Wash the eggplants, potatoes, and bell peppers thoroughly. Cut the peeled potatoes into round slices about half a centimeter thick. Slice the eggplants into 1 cm thick rounds, sprinkle with a little salt, and leave them on paper towels for 15 minutes to remove excess moisture and bitterness. Deseed the peppers and cut them into wide strips.
Place the potato and eggplant slices on baking sheets lined with baking paper, drizzle with 2 tablespoons of extra virgin olive oil, and bake at 200°C for 20-25 minutes until lightly golden and tender. Do the same with the pepper strips for 15 minutes.
Making the tomato sauce
In a large skillet, heat the remaining olive oil over medium heat. Add the thinly sliced garlic cloves and sauté for 1 minute until fragrant, without browning.
Chef's tip
Tumbet is even tastier the next day, once all the flavors of the Mediterranean vegetables and tomato sauce have settled.
In Mallorca, Tumbet is often enjoyed topped with a fried egg or as a perfect vegetarian main dish, accompanied by a generous slice of rustic bread.
