Cut the chicken breast into thin strips or bite-sized cubes. In a small bowl, mix the chicken with 1 tablespoon of soy sauce and half of the cornstarch (about 7 g), leaving it to marinate for 5 minutes so it stays very tender.
Finely grate the lemon zest and squeeze the juice. In a small bowl, prepare the sauce by mixing the lemon juice and zest with the wildflower honey, the remaining soy sauce, the remaining cornstarch, and 50 ml of cold water. Grate the fresh ginger and finely mince the garlic cloves. Slice the green onions diagonally.
Wok cooking
Heat the wok or a deep frying pan thoroughly over high heat and add the sunflower oil. Place the chicken pieces in a single layer and stir-fry them quickly for 3-4 minutes, stirring vigorously until golden and almost cooked through. Temporarily transfer the chicken to a plate.
Chef's tip
For a balanced sauce, adjust the amount of honey according to the acidity of the lemon: if you prefer a sweeter note, you can add another half teaspoon of honey.
The cornstarch marination technique ('velveting') protects the chicken fibers during quick, high-heat cooking, keeping the meat extremely juicy.
