Papanași fierți tradiționali (papanași leneși), deosebit de pufoși și delicați, preparați din brânză proaspătă de vaci și griș, învăluiți într-o crustă crocantă și aurie de pesmet tras în unt cu scorțișoară și zahăr vanilat. Serviți calzi cu smântână rece pentru un mic dejun sau brunch românesc autentic.

Preparation method

Preparing the dough and flavored breadcrumbs

In a spacious bowl, mash the fresh cottage cheese with a fork or a whisk until smooth. Add the eggs, a pinch of salt, and half of the granulated white sugar (30 g), then mix until combined.

Fold in the wheat semolina and all-purpose wheat flour (type 000). Mix well with a spatula until you get a soft, homogeneous mixture. Let the dough rest for 15 minutes at room temperature so the semolina can hydrate and bind the mixture.

While the dough rests, prepare the crunchy coating: melt the 82% fat butter in a large skillet over medium heat. Add the breadcrumbs and toast them for 4-5 minutes, stirring continuously, until golden and fragrant. Turn off the heat, let the pan cool for 2 minutes, then add the remaining granulated white sugar (30 g), vanilla sugar, and a pinch of ground cinnamon. Mix well.

Chef's tip

Letting the mixture rest for at least 15 minutes is essential: the semolina absorbs moisture from the cheese, ensuring fluffy papanași that do not fall apart while boiling.

The water must simmer over very low heat, just bubbling gently; vigorous boiling can break the delicate texture of the papanași.
