Peel a yellow onion and chop it very finely. In a large bowl, mix the minced pork with the finely chopped onion, the egg, 2 crushed garlic cloves, half of the dried thyme, and salt and freshly ground black pepper to taste. Mix the composition thoroughly with damp hands.

With damp palms, shape small, round meatballs, about the size of a walnut. Place them on a flat plate.

Cooking the green bean stew

Finely chop the second yellow onion and dice the carrot into small cubes. In a deep pan or a large pot, heat the sunflower oil over medium heat and sauté the onion and carrot for 3-4 minutes, until slightly softened.

Chef's tip

For an extra touch of traditional Romanian sourness, you can add 1-2 tablespoons of scalded borș or a little fresh lemon juice towards the end of cooking.

The green bean stew with meatballs is even tastier the next day, served warm with a slice of fresh homemade bread and, optionally, a dollop of sour cream.
