If using bamboo skewers, soak them in cold water for 20 minutes to prevent them from burning during cooking.

Finely chop 2 spring onions (reserving one for garnish), finely grate the fresh ginger, and crush the garlic cloves.

In a large bowl, combine the minced chicken with the chopped spring onion, Panko breadcrumbs, egg, half of the grated ginger and garlic, a teaspoon of soy sauce, and the sesame oil. Mix vigorously with a spatula or by hand for 2-3 minutes until the mixture becomes smooth and sticky.

Chef's tip

For an even smoother and juicier texture, you can chill the minced meat mixture in the refrigerator for 15 minutes before shaping it onto the skewers.

Tsukune skewers pair wonderfully with steamed Japanese rice or as a street food appetizer served alongside extra soy sauce.
