Clătite subțiri și aurii, umplute cu o compoziție cremoasă de brânză de vaci proaspătă, telemea sărată și mărar parfumat. Rulate cu grijă, așezate într-un vas termorezistent și scăldate într-un sos bogat de smântână, ou și cașcaval rumen, aceste clătite brașovene aduc la masă tot confortul unui brunch cald de toamnă. Se coc până prind o crustă rumenă și irezistibilă, gata să bucure întreaga familie într-o dimineață leneșă de weekend.

In a large bowl, whisk 2 eggs with a generous pinch of salt. Gradually pour in the milk and incorporate the sifted white flour, whisking vigorously with a whisk to prevent lumps from forming, until you get a smooth and fluid batter. Let the batter rest for 10 minutes.

Heat a non-stick pan greased with a little butter. Pour in a small ladle of batter and cook the crepes over medium heat for 1-2 minutes on each side, until golden and pliable. Transfer them to a plate and let them cool down.

Creamy filling and assembly

For the filling, mix the fresh cow's cheese with the crumbled cow's telemea, 1 egg, 2 tablespoons of the sour cream, finely chopped green onions, finely chopped fresh dill, and a pinch of black pepper in a bowl.

Chef's tip

If the telemea is very salty, you can keep it in cold water for 10 minutes before crumbling it to perfectly balance the saltiness of the filling.

The crepes can be assembled the evening before and kept in the refrigerator. In the morning, you just need to pour over the sour cream sauce and cașcaval, then bake directly.
