Huarache este un preparat clasic de street food mexican din Ciudad de México, numit după forma sa alungită de sanda. Baza crocantă din mălai este unsă cu o cremă aromată de fasole neagră și acoperită cu fâșii fragede de vită, salsa proaspătă, telemea sfărâmată și smântână fină.

Preparation method

Preparing the dough and bean base

In a bowl, mix the corn flour with a pinch of salt and about 180-200 ml of lukewarm water until you get a smooth, pliable dough that does not stick to your hands. Divide the dough into 4 equal balls and shape them into elongated ovals, about 1 cm thick.

In a pan, heat half of the olive oil and sauté the crushed garlic for 30 seconds. Add the drained black beans and ground cumin. Mash the beans with a fork until they form a thick, creamy paste. Season with salt and pepper to taste.

Cooking the huarache bases and beef

Heat a dry or cast-iron pan over medium-high heat. Cook each oval corn base for 3-4 minutes on each side, until it gets a golden, crispy crust on the outside while staying soft on the inside. Keep them warm.

Chef's tip

For an authentic Mexican flavor, add an extra pinch of cumin and a few drops of lime juice directly over the beef strips right at the end of searing in the pan.

If you want extra crispy huarache bases, you can lightly brush them with olive oil before cooking them in the well-heated pan.
