Slice the red onion into thin rings, place it in a small bowl, pour in the juice of 1 lime and add a pinch of salt. Leave to marinate for 15 minutes to turn pink and crisp. Slice the avocado thinly, and finely mince the garlic.

Drain the canned black beans. In a skillet, heat 1 tablespoon of oil, sauté half of the garlic for 1 minute, then add the black beans, half of the ground cumin, and a pinch of salt. Mash the beans with a fork or a potato masher until you get a thick and creamy paste (frijoles refritos).

Cooking the beef

Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the remaining garlic and the minced beef. Cook the meat for 6-8 minutes, breaking it up well with a spatula, until browned.

Chef's tip

Panuchos are a famous specialty from the Yucatán Peninsula; the secret lies in quickly frying the tortilla after filling it with beans, resulting in a crispy exterior and a velvety centre.

For extra freshness and authentic heat, you can add diced fresh jalapeño or a few drops of habanero hot sauce.
