Meat preparation and marinating
Wash and pat the pork shoulder dry with paper towels. Cut the meat into suitable steak slices (approximately 1.5 - 2 cm thick) to cook through evenly over the coals.
In a large bowl, prepare the marinade: mix the sunflower oil, classic mustard, finely minced garlic, dried thyme, sweet paprika, salt, and ground black pepper.
Generously coat each pork shoulder slice with the flavorful marinade on all sides, gently massaging the meat. Cover the bowl and let the meat marinate in the refrigerator for at least 30-40 minutes (or even 2-3 hours for optimal tenderness).
Chef's tip
Pork shoulder is a well-marbled cut of meat, ideal for grilling; allowing the meat to come to room temperature before grilling prevents thermal shock and preserves its juiciness.
Do not pierce the meat with a fork while grilling; use tongs to keep all the delicious juices inside.
