O budincă tradițională românească de toamnă, densă și profund aromată: gutui parfumate răzuite și înăbușite în unt cu scorțișoară, legate cu griș fin, lapte, ouă și îmbogățite cu miez crocant de nucă și stafide dulci. Preparing the quinces and flavours
Preheat the oven to 180°C and grease a round or oval ovenproof dish with a little butter. Wash the quinces thoroughly with a coarse cloth to remove all the fuzz from the skin.
Cut the quinces into quarters, remove the fibrous seed core, and grate the flesh using the coarse side of a grater. Immediately drizzle with freshly squeezed lemon juice to prevent browning and grate a little fine zest for freshness.
Melt 40 g of butter in a spacious saucepan over medium heat. Add the grated quinces, 50 g of granulated white sugar, and the ground cinnamon. Sauté everything for 8-10 minutes, stirring occasionally, until the quinces soften slightly and release an intense aroma. Allow them to cool down.
Chef's tip
You can soak the raisins for 15 minutes in a little rum or warm apple juice before incorporating them into the mixture.
Choose ripe, yellow quinces with an intense aroma for the best traditional flavour.
