Preparation method
Preparing the meat and pico de gallo
Slice the beef into thin strips. Mince the garlic cloves and mix them in a bowl with one tablespoon of olive oil, ground cumin, smoked paprika, half of the salt, and black pepper. Toss the beef strips thoroughly in this marinade and let them rest for 10 minutes.
For the fresh pico de gallo salsa, finely dice the tomatoes, deseed the jalapeño pepper, and finely chop it along with the red onion and fresh coriander. Place all the vegetables in a bowl, add the freshly squeezed juice of one lime and the remaining salt, then mix gently.
Cooking the filling and black beans
Heat a large skillet over medium-high heat with the remaining olive oil. Add the marinated beef strips and sauté them quickly for 3-4 minutes until nicely browned on the outside and tender and juicy on the inside. Transfer the meat to a plate.
Chef's tip
For easy flipping in the skillet without spilling the filling, use a wide spatula and press down lightly with your fingers on the top tortilla while sliding the spatula underneath the bottom tortilla.
If you prefer an even crispier texture, you can lightly brush the outside of the tortillas with a few drops of oil before placing them in the skillet.
