Sezamo
Preparation method
Preparing the ingredients
Rinse and peel the shrimp (leaving tails on if desired for presentation), then pat them thoroughly dry with a paper towel.
Dice the fresh tomatoes into small cubes. Finely chop the shallots and crush the garlic cloves. Slice the green onions into rings and chop the fresh coriander leaves.
Cooking the shrimp and sauce
In a deep pan or wok, heat one tablespoon of sunflower oil over medium-high heat. Add the shrimp and sear quickly for 1-2 minutes, until pink and firm. Immediately transfer them to a plate to keep them juicy.
Chef's tip
For an even more flavorful sauce, use ripe and fleshy tomatoes, and if you would like an extra kick of heat, you can add a few slices of fresh chili pepper to the sauce.
Do not overcook the shrimp in the first stage - quick searing preserves their tender texture and optimal juiciness.
