Ingredients
Preparation method
Preparing the meat and vegetables
Cut the boneless chicken thighs into thin strips. In a small bowl, marinate the meat for 10 minutes with 1 tbsp soy sauce, 1 minced garlic clove, a pinch of ground black pepper, and half a teaspoon of sesame oil.
Wash the green onions and cut them into stalks about 6-7 cm long. Cut the carrot into thin julienne strips.
Preparing the batter and dipping sauce
In a bowl, sift the white wheat flour 000 together with the cornstarch and fine table salt. Add the beaten egg and about 120 ml of ice-cold water. Whisk gently just until combined, without overworking the batter, to ensure a tender and crispy crust.
Chef's tip
The secret to ultimate street food-style crispiness is temperature: use ice-cold water for the batter mixture. The thermal shock in the hot, oiled pan guarantees a perfectly crispy crust.
If you prefer an extra kick of Korean heat, add thin slices of green or red chili pepper among the chicken strips before pouring the batter.
