Preparation method

Preparing the ingredients and meat

1

Wash the leeks thoroughly under cold running water to remove any dirt and cut them into rounds about 1.5–2 cm thick. Peel and finely chop the yellow onion, and finely mince the garlic cloves.

2

In a deep saucepan or large skillet, heat the 30 ml of sunflower oil. Add the chopped onion and sauté for 2–3 minutes until translucent, then add the garlic and minced pork.

3

Brown the minced meat over medium heat for 7–8 minutes, breaking it up well with a wooden spatula. Season with 3 g of dried thyme, 5 g of sweet paprika powder, 3 g of salt, and 2 g of ground black pepper. Add the 300 g of tomato passata, let it come to a simmer for 3–4 minutes, then remove the pan from the heat.

Chef's tip

For clean cuts into neat squares, let the moussaka rest for 15–20 minutes after taking it out of the oven; the layers will settle and the creamy topping will set.

Choose thicker, meatier leek stalks, using both the white and pale green parts, which offer a characteristic sweetness and wonderful texture.
