- 500 g fresh or frozen apricots
- 1 tsp vanilla extract or 1 vanilla pod
- 80 g chicory syrup or agave syrup
- Fresh mint for decoration
For this sorbet, use well-ripened fruit. Wash the apricots and remove the pits. Cut each apricot into eighths and place them in a freezer bag. Leave them in the freezer until they are completely frozen.
Apricots prepared this way can be used at any time to make a quick sorbet. Place the frozen apricots in a stand blender, along with the vanilla extract and chicory syrup (or agave syrup). If the mixture is too sour, add more syrup to taste. Blend everything until you get a smooth consistency and serve immediately. Decorate with fresh mint leaves.
Chef's tip
If you do not have chicory syrup, agave syrup is an excellent alternative, having a low glycemic index.
