Ingredients
- 500 ml chicken or turkey broth
- 150 g rice noodles
- 200 g turkey breast, very thinly sliced
- A finger-sized piece of ginger, sliced
- a piece of cloves
- ½ cinnamon stick
- 1 tablespoon fish sauce
- 50 g bean sprouts
- Fresh basil
- half a lime
Preparation method
- 1Slice the ginger thinly. Simmer the broth with the ginger, star anise, clove, and cinnamon for 30 minutes. Strain the spices.
- 2Add the fish sauce and keep the broth hot.
- 3Cook the rice noodles separately, according to package instructions; rinse them briefly and drain them.
- 4Place the raw turkey slices in serving bowls.
- 5Pour boiling broth over the meat to cook it lightly.
- 6Add the noodles and top with bean sprouts, basil, mint, and cilantro.
- 7Serve immediately, with lime wedges on the side.
