Ingredients

  • 500 ml chicken or turkey broth
  • 150 g rice noodles
  • 200 g turkey breast, very thinly sliced
  • A finger-sized piece of ginger, sliced
  • a piece of cloves
  • ½ cinnamon stick
  • 1 tablespoon fish sauce
  • 50 g bean sprouts
  • Fresh basil
  • half a lime

Preparation method

    Slice the ginger thinly. Simmer the broth with the ginger, star anise, clove, and cinnamon for 30 minutes. Strain the spices.

    Add the fish sauce and keep the broth hot.

    Cook the rice noodles separately, according to package instructions; rinse them briefly and drain them.

    Place the raw turkey slices in serving bowls.

    Pour boiling broth over the meat to cook it lightly.

    Add the noodles and top with bean sprouts, basil, mint, and cilantro.

    Serve immediately, with lime wedges on the side.
