Leave the mascarpone at room temperature for about an hour. Then, mix it for 4 minutes until airy.

Melt 125 g of dark chocolate in a bain-marie and let it cool slightly. Incorporate the melted chocolate, coffee, and amaretto liqueur into the mascarpone, mixing gently with a spatula.

Refrigerate the mixture for at least 2 hours to firm up.

Chef's tip

For a professional look, you can use small paper cups for serving the pralines.
