Cut the pork into medium cubes (about 3-4 cm). Peel and finely chop the onion and red bell pepper, grate the carrot finely or cut it into fine small cubes, and crush and finely chop the garlic cloves. If using fresh green beans, snap off the ends and cut the pods in half.
Cooking the Meat and Vegetables
In a large pot or a Dutch oven, heat the sunflower oil over medium heat. Add the pork cubes and brown them nicely on all sides for 7-10 minutes, until they change color and form a golden crust.
Add the chopped onion, carrot, and bell pepper to the meat. Sauté the vegetables with the meat for 5-6 minutes, stirring occasionally, until the onion becomes translucent and soft. Sprinkle with sweet paprika and half of the chopped garlic, stirring quickly for 30 seconds to release the flavors without burning the paprika.
Chef's tip
For a perfect traditional taste, choose tender pork shoulder or pork neck with a little fat, which will give a wonderful flavor to the tomato and dill sauce.
Fresh dill is the secret to this summer recipe — always add it at the end, after turning off the heat, to preserve its fresh and intense flavor.
