Preparation method
Preparing the filling and salsa
Finely chop the tomatoes, half of the red onion, and the fresh cilantro. In a bowl, combine them with the juice squeezed from half a lime and a pinch of salt to make a fresh pico de gallo salsa. Finely chop the remaining red onion separately.
For the bean filling, finely chop the yellow onion and crush the garlic cloves. Heat a tablespoon of sunflower oil in a pan and sauté the onion and garlic for 3-4 minutes, until golden and fragrant.
Add the drained black beans, ground cumin, smoked paprika, and 2-3 tablespoons of warm water. Mash the beans directly in the pan with a fork or potato masher until you get a smooth, thick paste. Cook for another 2 minutes over low heat and keep warm.
Chef's tip
The thickness of the patties is the authentic secret to bocoles: keep them about 1-1.5 cm thick so they can be easily slit open in the middle after cooking.
Slit the patties while they are still hot or very warm; the steam inside helps separate the fluffy interior without tearing the edges.
