Ingredients
Preparation method
Preparing the vegetables and meat
Peel the parsnips and cut them into medium dice. Peel the carrots, leaving them whole or slicing them lengthwise in half.
Trim the silverskin from the pork tenderloin, then season it evenly with salt and ground black pepper. Lightly crush the garlic cloves.
Velvety parsnip purée
Boil the parsnip cubes in salted water for 15–20 minutes, until completely tender.
Chef's tip
For an ultra-fine, fine-dining worthy texture, pass the parsnip purée through a fine-mesh sieve after blending.
The resting time for the meat (8–10 minutes) is essential for the muscle fibers to retain all the flavorful juices inside.
