Sezamo
O mâncare tradițională românească de toamnă, densă și reconfortantă: fasole albă cremoasă bătută cu usturoi, servită cu jumări crocante rumenite din fleică de porc și ceapă călită aurie cu boia dulce.

Preparation method
Preparing and browning the pork cracklings
Cut the pork belly into cubes suitable for cracklings (approximately 2x2 cm). Place them in a deep skillet or a cast-iron pot over medium-low heat.
Allow the pork belly to slowly render its fat and brown evenly, stirring occasionally, for 20-25 minutes, until the cracklings turn golden and crispy. Transfer the cracklings onto a plate lined with paper towels and reserve the flavorful fat from the pan.
Caramelizing the onion with sweet paprika
Peel and finely chop or slice the yellow onion into julienne strips. In the same pan, add the sunflower oil to some of the rendered pork lard.
Chef's tip
For an especially airy and smooth whipped bean dip, use the immersion blender at high speed and add the lukewarm fat in a thin stream, just like making mayonnaise.
If you want a subtle traditional smoky note, you can pair the freshly browned cracklings with a pinch of smoked paprika sprinkled over the sautéed onion.
