Preparation method
Preparing the Ingredients and Skewers
Cut the chicken frankfurters into equal halves and cut the fresh mozzarella into rectangular blocks of similar size. Thread half a frankfurter and a piece of mozzarella onto each skewer. Place the skewers in the freezer for 15 minutes to firm up so the cheese does not melt too quickly during frying.
Peel the white potatoes and cut them into very small cubes (about 5 mm). Rinse the potato cubes under cold running water to remove excess starch, then pat them thoroughly dry with paper towels. Dust the potatoes with a tablespoon of white flour to help them adhere.
Preparing the Thick Batter
In a deep bowl, mix the remaining white flour with the baking powder, white sugar, and fine table salt. Add the fresh beaten egg and cold whole milk. Whisk vigorously until you get a very thick, smooth, and sticky batter (similar to a dense pancake batter). Pour the mixture into a tall glass to make coating easier.
Chef's tip
To keep the mozzarella from leaking during frying, freezing the skewers for at least 15 minutes before battering is the secret to success.
Cutting the potatoes into very small cubes (under 0.5 cm) is essential for them to cook through completely at the same time the batter and panko turn crispy.
