Masterpiece

Sezamo
Piftie tradițională de porc, limpede, aromată și bine închegată natural, servită cu usturoi și hrean. Un clasic autentic românesc.
Preparation method
Simmering the meat and vegetables
Wash the pork shank and pork leg pieces thoroughly. Place the meat in a large pot and cover with about 3-4 liters of cold water. Place over medium heat and bring to a boil.
Carefully skim off the foam from the surface until the broth remains completely clear. Add a teaspoon of salt, the bay leaves, and the black peppercorns. Reduce the heat to low and let it simmer gently, partially covered, for 2 hours.
Peel the carrots, celeriac, and yellow onion. Add them whole to the pot and continue simmering gently for another 1.5 - 2 hours, until the meat easily falls off the bone.
Chef's tip
The secret to a clear aspic is simmering over very low heat, without boiling vigorously, and skimming carefully at the beginning.
To check if the broth will set without added gelatin, place a few tablespoons of broth on a saucer in the refrigerator for 10 minutes – if it turns gelatinous, the aspic is ready.
