Preparation method
Preparing the beef filling
Finely chop the yellow onion and garlic. In a large skillet, heat the sunflower oil over medium heat and sauté the onion for 3-4 minutes until translucent, then add the minced garlic for another 1 minute.
Add the ground beef, breaking it up with a wooden spatula. Cook until it completely changes color and the released liquid begins to reduce (about 6-8 minutes).
Add the tomato purée, ground cumin, smoked paprika, 5 g of the fine table salt, and 2 g of the ground black pepper. Mix well, reduce the heat to low, and simmer for 12-15 minutes until the sauce reduces and becomes thick and dense. Allow the filling to cool slightly.
Chef's tip
If you do not have dried corn husks on hand, baking paper is the perfect alternative for wrapping the tamales, keeping the dough incredibly tender and juicy during steaming.
Let the tamales rest for 5-10 minutes after removing them from the steam before unwrapping; this step helps the corn dough settle and peel cleanly away from the paper.
