Ingredients for Seitan

  • 200g seitan, cut into pieces or strips
  • 1/2 cup yogurt (or vegan yogurt)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon grated ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon chili powder
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Pepper to taste

Ingredients for Korma

  • 2 large onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons vegetable oil
  • 1 cup coconut cream (or coconut milk)
  • 1 tablespoon coriander powder
  • 1 tablespoon garam masala powder
  • Salt to taste
  • Pepper to taste
  • Dill or fresh chopped coriander for garnish
  • 1/2 cup ground almonds or almond paste

Instructions for Seitan

    Start by marinating the seitan. In a large bowl, mix the yogurt (or vegan yogurt), lemon juice, grated ginger, minced garlic, chili powder, turmeric powder, salt, and pepper.

    Add the seitan pieces to the marinade and ensure they are well coated. Let them rest for at least 30 minutes or longer, to absorb the flavors.

Instructions for Korma Sauce

    In a large pan or pot, heat the vegetable oil over medium heat. Add the chopped onion and cook until soft and lightly golden.

    Add the minced garlic and grated ginger to the onion and cook for 1-2 minutes, until fragrant.

    Add the coriander powder, garam masala powder, cardamom powder, salt, and pepper. Mix well to coat the onion with the spices.

    Add the ground almonds or almond paste and mix well.

    Pour the coconut cream (or coconut milk) into the pan and stir.

    Add the marinated seitan pieces and mix well. Let it simmer for approximately 10-15 minutes for the flavors to combine.

    Serve Seitan Ka Korma with basmati rice or papadums. Garnish with fresh chopped parsley or coriander.
Tip
This is a basic recipe for vegan Ka Korma, but you can adapt the ingredients and spices according to your preferences. Or you can replace the seitan with other vegetarian proteins, such as tofu or any type of nuts (e.g., cashews).
