Ingredients for Rolls

  • 8-10 rice paper wrappers
  • 200g shrimp, peeled and cooked (optional)
  • 200g chicken meat, cut into thin strips (optional)
  • Fresh mint leaves
  • Fresh coriander leaves
  • Fresh basil leaves
  • Thin cucumber slices
  • Green onion or chives
  • Thin bamboo shoots (optional)
  • Chinese lettuce or iceberg lettuce cut into julienne strips
  • Very thin rice noodles, soaked in warm water for 10 minutes and chopped

Ingredients for Peanut Sauce

  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon fresh lemon juice
  • Sriracha sauce

Ingredients for Spicy Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 red chili pepper, deseeded and finely chopped
  • 1 piece of 3 cm ginger, grated
  • 2 cloves garlic, very finely chopped
  • 1 tablespoon lemon juice
  • Chopped fresh coriander

Instructions

    Wash and prepare all vegetables and herbs. Cut the meat and shrimp into thin strips, if not already prepared.

    Mix all ingredients in a bowl or leave them separate, depending on how you want to roll the spring rolls.

    Fill a tray with warm water. Take each rice paper wrapper and dip it in warm water for about 15-20 seconds or until it becomes soft and pliable.

    Place the rice paper wrapper on a flat work surface.

    Place a few mint and coriander leaves on the bottom edge of the rice paper wrapper. Add the meat pieces (if using) and shrimp on top of the herbs. Place cucumber strips, green onion leaves or chives, bamboo, and mung bean sprouts (if using) next to the meat and shrimp. Slowly roll the rice paper wrapper starting from the bottom, then fold the side edges towards the center. Continue to roll tightly until you form a tube or a roll wrapped with vegetables and meat.

    Peanut Sauce: In a small bowl, mix peanut butter, soy sauce, sugar, warm water, and lemon juice. Add sriracha sauce or chili pepper, if you want it spicy. Mix well until you get a creamy consistency. Spicy Sauce: Put all ingredients in a jar with a lid and mix well until combined.

    Serve Goi Cuon with sauces. You can cut the rolls in half diagonally to make them easier to eat.
