Preparation method

Preparing and Marinating the Chicken

1

Cut the chicken breast into cubes of approximately 2 cm and place them in a spacious bowl. Peel 2 cloves of garlic and crush them over the meat. Add ground coriander, sweet paprika, dried oregano, grated zest and juice from one lemon, salt, and pepper. Mix everything well so that the meat pieces are uniformly covered with spices. Prepare 4 skewers, thread the meat cubes onto them, and leave them in the refrigerator for at least 30 minutes.

Preparing the Tzatziki Sauce

1

While the meat is marinating, prepare the tzatziki sauce. Finely chop the mint and dill. In a small bowl, grate the cucumber finely, add a little salt, and let it sit for 5-8 minutes to release its water. Meanwhile, peel the last garlic clove, crush it into a medium bowl, and mix it with the mint, dill, and Greek yogurt. Squeeze the grated cucumber well to remove excess water, then add it to the bowl along with the juice from half a lemon and salt to taste. Mix well and refrigerate the sauce.

Cooking and Serving

1

After the skewers have chilled, heat 2 tablespoons of oil in a pan over medium heat. Place the skewers in the pan and fry them for 5-6 minutes on each side, until the chicken is well cooked and golden. Remove the skewers from the pan.

Chef's tip

If using wooden skewers, soak them in water for 20 minutes before threading the meat onto them, to prevent them from burning in the pan.

For an even more authentic taste, you can serve the skewers with lightly warmed Greek pitas.
