Season the beef with fine salt, freshly ground black pepper, cumin, and crushed garlic, drizzling with a little olive oil and fresh lime juice. Let it marinate for 10-15 minutes.
For the pico de gallo salsa, finely dice the tomatoes, half of the red onion, and some of the fresh coriander. Mix them in a bowl with freshly squeezed lime juice and a pinch of fine salt.
For the guacamole, mash the avocado flesh with a fork, add the remaining crushed garlic, salt, chopped coriander, and lime juice until you get a fresh, creamy texture.
Chef's tip
The authentic secret to vampiros is slowly toasting the tortilla on the griddle until it becomes very crispy and wavy before adding the cheese.
For an authentic spicy kick, add finely chopped fresh chili pepper or a few dashes of Mexican hot sauce to the pico de gallo salsa.
