Sezamo
Preparation method
Marinating the meat
Crush the garlic cloves and mix them in a large bowl with the Greek yogurt, extra virgin olive oil, dried thyme, sweet paprika, iodized salt, freshly ground black pepper, and the juice of half a lemon.
Pat the pork chops dry with a paper towel, then coat them generously on all sides with the creamy yogurt marinade. Cover the bowl and let the meat marinate in the refrigerator for at least 2 hours (or overnight for ultimate tenderness).
Grilling
Take the meat out of the refrigerator 30 minutes before cooking to bring it to room temperature. Heat the grill or a grill pan over medium-high heat.
Chef's tip
The lactic acid in Greek yogurt gently tenderizes the meat fibers without drying them out, turning even lean pork chops into extraordinarily juicy meat.
Before placing the chops on the grill, gently scrape off excess yogurt to allow the meat to caramelize nicely without burning the surface marinade.
