Ingredients
- 700 g fresh cherries or sour cherries
- 340 g superior white wheat flour 000
- 260 g granulated sugar
- 250 ml cow's milk
- 20 g vanilla sugar
- 3 pcs chicken eggs
- 12 g baking powder
- 1 tablespoon powdered sugar for sprinkling
- 1 tablespoon butter for greasing the tray
Instructions
- 1Preheat the oven to 180 °C. Grease a baking tray (approximately 22×28 cm) well with butter and dust it with a little flour.
- 2Separate the eggs into yolks and whites. Beat the egg whites until stiff peaks form. In a separate bowl, mix the egg yolks with granulated sugar and vanilla sugar until the mixture becomes light in color and creamy.
- 3Gradually add the flour mixed with baking powder and pour in the milk, stirring until you get a homogeneous batter. Finally, gently fold in the egg white foam, using a spatula and circular motions from bottom to top.
- 4Pour the batter into the prepared tray and evenly distribute the pitted cherries (or sour cherries). Place the tray in the preheated oven and bake for approximately 30 minutes, until the cake turns golden.
- 5Let the cake cool completely before cutting it. Before serving, sprinkle powdered sugar on top. Tip: The cake is ready when it passes the toothpick test – if the toothpick comes out clean, the dessert can be removed from the oven.
