Cut the dragon fruit lengthwise and scoop out the flesh with a spoon. Place the flesh in a blender along with the coconut water, maple syrup, and mint leaves, then blend until smooth.

Fill the popsicle molds halfway, add crushed freeze-dried fruit pieces, then pour in the rest of the mixture and sprinkle more freeze-dried fruit on top.

Place the molds in the freezer for 5-6 hours, or preferably overnight, until the ice cream is completely firm.
Chef's tip
For an even creamier texture, you can replace coconut water with full-fat coconut milk.
